Adjust the TPS back a bit, that will reduce Ignition advance at high revs, may be enough to stop the Knock
 
As much as that is a good question I do not have a Carby Himalayan:(,
but on the EFI bikes the TPS has 3 wires , the one at the top can be connected to one side of a Multi meter and the other lead earthed.
I wouldnt bother with that too much but the TPS that I understand is connected to a Carby can only give feedback on position and as there is no way it can affect the fueling it can only be for Ignition advance. loosen it and let it move a bit with the throttle and lock it up again.
If you move against the throttle it will tell the (whatever system it employs ) that the throttle is more open and advance the Timing to suit.
